Sawachi Ryori
Sawachi-ryori is a large dish heaped with local delicacies such as sashimi, katsuo tataki, sushi, fried food, stewed food, and pickles. The dish is said to have originated in the Muromachi Period. Originally deeper dishes were used for serving, with different names used for different shaped dishes. In the Edo period, the term 'sawachi' emerged as a generic term. A sawachi festival was founded in 1968 to hone and pass on the tradition and techniques, and sawachi ryori is still indispensable for any drinking party in Kochi today.
