A staple food in Saitama Prefecture which loves udon noodles
Hiyajiru Udon
Udon noodles have long been a staple dish for the farmers in Saitama Prefecture. “Manju for breakfast, and udon for lunch” is a saying which describes the food culture of Saitama Prefecture, and people used to cook homemade udon noodles instead of rice. Hiyashi udon is a kind of udon you dip udon noodles in a soup made with dashi, miso, sesame seeds and sugar. It has been spread to all over Saitama not only because it tastes good but also because it is rich in nutrition.
