Ankake Udon
In Esashi, which is located on the northern part of Oshu City, Iwate Prefecture, people have traditionally eaten their regional cuisine, a hot bowl of Ankake Udon noodles to keep the cold away during winter. The traditional taste of home that has been handed down in each family can now be found at local restaurants in Esashi. The essence of Ankake Udon is the thick soup, made from fish broth seasoned with soy sauce, poured into a bowl of freshly-cooked noodles. Each restaurant serves the bowl with a variety of toppings, such as shiitake mushrooms, datemaki egg rolls or boiled eggs.
