Seafood soup with sea urchin and abalone
Ichigoni
A specialty of Hachikami Town, 'Ichigoni' is a richly flavored seafood soup containing local delicacies sea urchin and abalone. The name (translated as 'boiled strawberries') is thought to come from the resemblance of sea urchin roe in the milky white soup to wild strawberries in the morning mist. With humble beginnings as a meal cooked on the beach by fishermen, it is an exquisite dish that concentrates the flavors of marine delicacies into a bowl of soup.
