Chitake soba

This is a dish of soba or udon noodles with simmered mushrooms called “chitake.” Having chitake with noodles is a unique dish of Tochigi Prefecture, and this is a delicacy of summer. Chitake gives rich fragrance and flavor to the dish.

Recipi of cuisin

for 4 persons

  • chitake100g
  • eggplants150g
  • oil3 tablespoon
  • Salt1 pinch
  • dashi6 cups
  • shoyu140ml
  • sugar1 tablespoon
  • mirin3 tablespoon
  • garnish (green onions)30g
  • boiled soba4 servings

Chop off dirty parts of chitake, and cut big ones into smaller pieces. Soak in salt water for 10 minutes and drain.

Cut eggplants into halves, and slice crosswise. Soak in water for 10 minutes and drain.

Heat oil in a pan, and stir-fry chitake and eggplants until fragrant.
4.
Add dashi and heat to a boil, then add shoyu, sugar and mirin, and lightly simmer.
5.
Put soba in a bowl, and pour the chitake soup
6.
Garnish with finely chopped green onions
