Local udon noodles with more than 300 years of history
Komatsu udon
"Komatsu udon" used to be presented as a gift of the Kaga Domain in the old times, and it was also praised by a haiku poet, Matsuo Basho, when Jinsei presented it to Basho. It is a local dish from Komatsu City in Ishikawa Prefecture that has a long history of over 300 years. The noodles are kneaded with river-bed water from the sacred mountain of Hakusan and light colored transparent dashi set off each other and are in great harmony. There are over 70 restaurants in Komatsu City that serve Komatsu udon.
