Inaniwa Udon Noodles

Dried noodles made with a unique method of flattening by hand. The thin noodles cook quickly, have a smooth texture and are easy on the throat. It is said that Kichizaemon Inaniwa came up with the method in the fifth year of Kanbun (1665). As production was initially limited, Inaniwa noodles were originally used by the Akita Clan as gifts to other clans. While they were initially a luxury, Inaniwa noodles are currently eaten in homes and restaurants all year round, served hot in winter and cold in summer. It is one of the most famous local specialties of Akita, and a popular gift from the area.
