Meshizushi
Meshizushi is a kind of fermented sushi of salted fish and vegetables, marinated in a mixture of rice and koji malt. Rich in protein, vitamins, minerals, dietary fibre and enzymes that help digestion, this excellent healthy food has been traditionally eaten in Aomori, especially as a preserved food during the long winter. Enjoy the variety of fish it is made with, such as Japanese sandfish, salmon, Pacific herring, and atka mackerel, with a bowl of rice or with your drinks.
