Okkirikomi
Okkirikomi is hand-kneaded flat, wide udon noodles and seasonal vegetables, such as taro and daikon radish, simmered in plenty of broth seasoned with soy sauce or miso. In some regions, it is also known as Nibo-to, Nibo-tou, or Okirikomi. It is said to have been originally made by women in farming communities as an easy and nutritious dish to cook in abundance for their families. Since then it is a popular taste of home in Tochigi Prefecture.
