Kokera Sushi

“Kokera sushi”, a local specialty of Toyocho, Kochi prefecture, is a kind of many layered oshizushi (pressured sushi). Rice is mixed with flaked grilled fish and yuzu citron vinegar, topped with shiitake mushrooms and carrots, topped again with rice, then topped with various toppings. It is an essential dish for celebrations and festivals as the layers were said to “pile happiness” on top of one another. Big ones are gorgeous in appearance and have a lot of impact, but they taste great because of the delicious rice produced locally. Kokera sushi is a local delicacy with rice as its main character.
