Kanshimame Dukedon

"Shimame" a name for fresh surumeika caught in the Japan Sea. In a city called Ama-cho in Okigun, Shimane Prefecture, surumeika caught in the best winter season is called "kan no shimame" or "kanshimame." "Shimame Dukedon" is a rice bowl with kanshimame marinated in a mixture of squid liver and shoyu. This rice bowl is only possible with very fresh squids, and this dish is loved not only the locals but also nationwide as a popular souvenir of Oki.
