Tasty squash simmered in soup
Yu-gao Ni
Yu-gao is a kind of long squash, and its stew is a traditional home cuisine in Daito and Higashiyama area in Ichinoseki City, Iwate Prefecture. The seeds and soft fibre are scooped out before cooking, and the tender meat of yu-gao is slowly simmered in soy sauce-based soup. It is often served at local restaurants as well.
