“It is not soba, but udon neither”a unique, but popular dish


“Muchimugimen”is a kind of noodles made of“muchimugi”which is a specialty of Fukusaki city. Muchimugimen is very unique for its fragrant smell and texture, and it looks like soba, but it has a similar chewy texture of udon. Muchimugi has more mineral, protein and β-glucan compared to flour, thus it is getting more attentions as a healthy food that helps to lower cholesterol. Muchimugimen is good to be eaten cold in summer, and in a hot soup in winter. It is also suitable for a nabe since it does not get soft easily.
