A pressured sushi popular in Hiroshima
Iwakuni Sushi
This is a sushi made of locally harvested vegetables, lotus roots and fish, to make preserved food. Many layers are pressed in a wooden pressure frame, and stone weights are used to pressure them. As large quantity can be made at once, it is often served at festivals or gatherings with a lot of thinly cut omelets and lotus leaves to garnish on top.
