Kurumafu

Yakifu is a traditional local food of Niigata Prefecture referred as "a taste of mother's cooking" that has been very popular for a long time. Kurumafu is a local product of Echigo, Niigata Prefecture, and it is made by roasting a mixture of wheat gluten and flour. Some shops make this without any additives, and carefully wraps and roast 4 times each. Kurumafu can be digested easily thus is also popular as a healthy ingredient for babies and old people. It can be used for osuimono, miso soup, sunomono, sukiyaki, yosenabe, chawanmushi, udon, and other dishes. This is an ingredient for everyday life.
