Momiuri

"Momiuri" is a kind of cucumber sunomono which is made by squashing (momikomu) cucumbers with salt until they become wilted, and "momiuri" was named after the way it was made by "momikomu (squashing)." "Momiuri" has a light and refreshing flavor, and also contains an ingredient that loosen up stress. This dish is often served in summer as a side dish. Momiuri is also made for celebrations of rice harvest in autumn, in which octopus is always mixed in to prey for good harvests.
