Rakkyo Sweet Vinegar Pickles
Rakkyo (Chinese onions) are a major crop of central Tottori, including Hokueicho and Fukubeson, which is known for its ‘Sakyu Rakkyo’ brand. With the hardy rakkyo able to be grown in sand dunes with little water, large scale production began with the establishment of industrial associations in the Taisho period. Rakkyo have become a symbol of Tottori prefecture, with washed rakkyo and rakkyo with roots on being sold across the country during harvest time, and pickled rakkyo available year round.
