Katsuo aburi ju

"Katsuo aburi ju" is a local dish born in Nichinan City known for its "single-hook bonito fishing." This is an extravagant rice bowl dish using fresh bonito that is marinated in two different kinds of sauce and broiled on shichirin. If preferred, bonito will be served as sashimi, or with ochaduke, so this one dish can be enjoyed in three different flavors. Local rice from Miyazaki Prefecture is used in the dish, and side dishes, pickles and soup are also made with seasonal local ingredients. There are several restaurants in Nichinan City that serve Katsuo aburi ju.
