Nishin no Sanshouduke

This is a kind of home preservative food made of dried nishin pickled in sansho. It is prepared when sansho is in season in the early spring, and always served at rice planting and festivals. Sansho mellows the strong flavor of nishin and makes it a good side dish for Sake, thus it is still a staple dish on menu at izakaya.
