A local taste born in cold winter
Seasonings such as spring onion, wild vegetables such as shiitake mushrooms and bamboo shoots are mixed with homemade miso, baked on hoha (magnolia leaves) and placed upon cooked rice. Recently the dish has developed into a style to serve guests, and sometimes they are served with vegetables and meat together with hoha miso. In this case it becomes a dish on its own instead of putting it on top of rice.
