Plenty of wild brackens grow in mid-ranged and high mountain areas. People pick them while they are still soft, and process them in order to enjoy the taste all year round. Brackens are essential for rice cooked with wild plants.

- Wash the brackens.
- 2.
- Put brackens into boiling water and boil for 2 to 3 seconds. Drain in a basket.
- 3.
- Mix okara and nigari together.
- 4.
- Wait till the brackens are cool. Spread 3. in the bottom of a bucket, and place the brackens on top. Cover the brackens with 3., then place the brackens again. Repeat the process.
- 5.
- Place a light weight on top.
