Scarlet Turnip Pickles
This is a scarlet colored turnip pickles, a vegetable that is referred to in Iyobushi, a traditional song of Ehime. Shiki Masaoka, a haiku poet from Ehime also wrote about this pickles. The wild original of the scarlet turnip is hiyasai turnip from Omi, which was transferred to Dogo and then improved. It is said that when the scarlet color is clear it will be a good year, and it is loved as a dish that brings fortune. The turnip turns red because the anthocyanin makes a chemical reaction with vinegar. Citrus vinegar is used to produce brighter red color.
