Shigure

Shigure is a local sweet from Ozu city. It resembles uirou but it has the remaining food texture of the azuki beans inside. Carefully selected azuki beans are mixed with sticky rice flour, rice flour and sugar, and steamed in a basket steamer. The shiny appearance and the springy texture are the characteristics. Special technique is crucial in leaving the azuki bean texture, which only well trained artisans have. The sweetness of the anko is so mild that you cannot help wanting more. Some shops have various kinds, such as sesame seeds, mugwort, or chestnuts.
