A special dish with full flavour of squid from Hakodate
Ika Shumai
Ika Shumai is steamed squid dumplings made with the paste of squid from Hakodate mixed with ground pork filling, and covered with strips of thin shumai flour wrapper. The wrapper strips add an airy, fluffy texture to the dumplings, and hold the soy sauce-based dipping sauce very well. As the squid paste is made using the whole squid including its cartilage, the dish not only offers the full flavour of the squid, but also adds a crunchy texture. It is a recommended dish to go with both drinks and meals.
