Sansai Nabe
Sansai Nabe is Yamagata’s specialty hot pot to fully enjoy the diverse variety of wild vegetables nurtured in the fertile soil of the prefecture. In a big pot with plenty of broth seasoned with soy sauce, abundant vegetables are slowly simmered with mushrooms and chicken, sometimes with the meat of rabbit or bear caught in nearby mountains. Each region has their own choices of wild vegetables and other ingredients to add to Sansai Nabe, for example wheat gluten in Shonai region, but with every pot, you can relish the delicate textures and flavours that only fresh wild vegetables can offer. Why not travel across Yamagata to try different types of nabe, and the variety of local sake rice wine?
