Thin and long mochi rice cake made from non-glutinous rice
Bero Bero Mochi
Bero Bero Mochi a local rice cake of Atsumi area in Tsuruoka City. Made from non-glutinous rice, the stick-shaped mochi has a unique texture. As it becomes soft and tender when added into a hot pot, it was typically carried by matagi traditional hunters when they went into the mountain. In Atsumi area, the soft but not-mushy mochi is often used as the ingredient for rice cake and vegetable soup, and sweet red bean soup. It is given the unique name Bero Bero Mochi because of its saggy look as it comes out of a special machine to form the stick shape.
