Yamagata’s specialty - big chunks of sweet corn in miso soup
Tomorokoshi no Miso Shiru
In and around Tsuruoka City, Yamagata Prefecture, sweet corn is the standard ingredient for miso soup. The recipe is quite simple – cut sweet corn into big round pieces, put them into boiling water, and add miso paste when the sweet corn in cooked soft. The broth from the sweet corn mixed with miso adds a rich flavour to the soup. In other regions, too, Hokkaido being one of them, sweet corn has been commonly used as the ingredient for miso soup.
