Edamame no Miso Shiru
Add to boiling water green soybeans in their pods, and season the soup with miso paste – this simple soup is a popular home dish in Yamagata. In some areas, not only the pods but also the stems and leaves are added to the soup. The key to make this soup tasty is to simmer the beans until their colour turns brown to bring out the earthy, deep flavour of the beans, to be mixed with the richness of miso.
