Hiruagi
"Hiru" refers to garlic, and "agi" refers to stir-frying, thus "Hiruagi" means a stir-fried garlic leaves together with pork back ribs, carrots, itokonnyaku, and kamaboko. It is cooked quickly over high heat and seasoned with shoyu and salt. The simple flavored stir-fried vegetables go pretty well with rice. Garlic leaves are thin and look like negi, and its green color stands out when cooked, but its strong aroma truly is of garlic. This dish has been loved by the people of Amami islands as a quick dish full of stamina.
