Whole Dried Samma
Whole dried samma (saury) from the Owase fishing port that has no unneeded fat is famous from Owase. Catching saury is said to have started around 300 years ago during the Edo period, when gill net fishing was invented in the Kumano Sea of southern Mie and later spread to other places in Japan. The saury caught here have little fat as they have migrated from the North. Salting them rather strongly and softly drying them under the winter sun without removing the heads nor the guts is the unique method in Kumano. Light and healthy saury without any unneeded fat can be enjoyed.
