Biwa Trout Dishes
Biwa trout, an endemic species of the Salmonidae, live in the Biwako Lake area. The trouts swim upstream the rivers they were born and lay eggs, mainly in northern Biwako lake between mid October and late November. They can grow as big as 60cm long. The flesh is bright salmon pink when cutting them as sashimi and has high quality fat just like fatty tuna, which melt in your mouth. They taste equally delicious as salt-grilled, meuniere, or cooking with rice. But they is very rare to find in the market so they can only be enjoyed in limited restaurants.
