Kanichiri
Kani-chiri is a type of hot pot derived from 'chiri-nabe'. As crab and vegetables are boiled in a very light kombu dashi soup, much like 'mizutaki', the flavor of the ingredients is not altered. Fukui Prefecture is an undisputedly famous producer of crabs, especially echizen crabs. You can fully enjoy the elegant sweetness and texture of the thick meat in this local specialty. Fresh crabs can be eaten raw, but you can also enjoy them dipped briefly in hot water, or cooked well with the vegetables. The juicy fresh parts mingle exquisitely with the firm cooked parts on your tongue.
