Naabeeraanbushi
Naabeeraa is edible sponge gourd and is a typical Okinawan summer vegetable. Because it is easy to grow many family grow on their own, making this summer village life scene. This dish is a stew of pork which is the essential to Okinawan cuisines and sponge gourd with miso flavor. “Nbushi” is a miso stew dish with lots of ingredients. You can enjoy the unique soft and meaty texture of this vegetable. Pork can be substitute with Spam or tuna, and sometime, Shimatofu (Okinawan peanuts tofu) is added. Sweet miso flavor goes well with rice. It is the typical summer family dish in Okinawa.
