Ago Chikuwa

In Tottori Prefecture, flying fish are locally known as ‘ago’. Chikuwa made from flying fish paste is called ‘ago chikuwa’, and is characterized by a delicious firm cooked skin, great aroma and firm texture. It is delicious eaten on its own, can be added to soups and other dishes, or used to make a dashi stock. Compared to regular chikuwa it is dark in color, with a firm texture and quite filling. The enhanced richness allows you to enjoy the complete flavor of flying fish. It is an important traditional local food served as a snack to accompany drinks at parties.
