In addition to the burdock tempura udon, this is the other udon noodle dish that represents the Fukuoka area. A ‘maruten’ fried fishcake (a large round fried fishcake known in other parts of Japan as ‘Satsuma-Age’) provides some very hearty eating as it sits atop the warm noodles.
