This is takikomi gohan made with maitake mushroom, a specialty of Iinan City, and vegetables such as carrots. Maitake mushroom is rich in aroma, has a nice texture, and is nutritious. It is rich in vitamins, minerals, fibers, especially zinc, niacin and vitamin D. Maitake mushroom is difficult to cultivate as it needs to be carefully taken care of with the proper temperature, humidity and the amount of light it gets.
