Yakitori from Higashimatsuyama uses pork head meat instead of chicken. Higashimatsuyama style Yakitori is eaten with spicy miso sauce. There are more than 100 Yakitori shops in the city, most of them make the original blend sauce with White Miso, garlic, pepper and other spices. Higashimatsuyama Yakitori Bowl is a stew on the rice with head meat marinated in special sauce and vegetables seasoned with spicy miso. This is the new style of Yakitori suggested by Higashimatsuyama.
