Conger eels Sushi
In the Edo Era, people fished at Edo Bay (it is now Tokyo Bay) and made it into Sushi. It is where “Edo-mae Sushi” was named after. The MUST of Edo-mae Sushi is conger eel. Recently, the amount of fishing is controlled in Tokyo Bay and the number of fish is declining. Conger eels are, however, fished there and evaluated as the top value in Japan. The best season is from July to August. It looks like an eel, but tastes not so greasy as an eel. It is rich in flavor and worth many steps of preparation.
