Shirasu-don
Shirasu-don is well-known as specialty of Kamakura, Enoshima Island and Chigasaki in Kanagawa. Generally, Shirasu-don has boiled young sardines on rice bowl, but here in Kanagawa, where young sardine fishing is active, raw young sardines are served on top of rice bowl. Transparent sardines with sea-weed, sliced leek and Japanese herb as seasonings, and with soy sauce and TARE as preferred, makes a great rice bowl with sea flavored items. Please enjoy the smooth texture and specific flavor of raw sardines.
