Hyuga kabocha duke
Hyugakabocha is a local product of Miyazaki Prefecture, and it is also called "Nihon kabocha" or "Kurokawa kabocha" which has a blackish green rough surface. The flesh is very soft, sweet and very bright in color. "Hyuga kabocha zuke" is pickled hyuga kabocha in miso made by a special method. This crunchy and rich flavored pickles have become a popular delicacy of Miyazaki Prefecture. It goes well not only with rice as a side dish but also with Japanese tea and sake.
