Tsumina Plates
Tsumina is a word used for all plants that grow in the mountains, fields, villages and beaches. Flowers, grass, trees, seaweeds, fruits are all included in this word. It is a little different from general vegetables, yet are attractive and nutritious edible plants. Dandelions, horsetails, stag seaweeds are to name a few. “Tsumina moyou” is a series of 22 small plates of tsumina from the sea and mountains, which was born with the local people’s wish to have many people enjoy such tsuminas. The kind of tsumina used differs each day, but that is also the attractive point of the dish.
