Yubeshi
Yubeshi is a Japanese confectionary, which was invented in the Genpei Period as a preserved food and a portable ration at that time. There are various yubeshi with various ingredients and ways of cooking it, however, yubeshi made in Nanto City is a very simple one which is simply flavored with shoyu-based sauce.

- tablespoon sugar1

- Wash kanten, put kanten and water in a pan and leave it for 15 minutes. Put on the heat, and mix well until dissolved.
- 2.
- Once kanten is dissolved, add A and boil for 2 to 3 minutes, add the beaten egg and ginger juice, and remove from the heat right away.
- 3.
- Pour into a container, and cool it until set.
- 4.
- Cut into desired sizes, and dish up on a plate.
