Yawata Champon

Yawatahama, Ehime prefecture is a city of champon – it has more than 40 champon restaurants in the city of 40,000 people. The champon of Yawatahama is the arranged version of the noodles culture of Nagasaki. It is now more than a local specialty, but is loved as a soul food of its people. While Nagasaki champon has white thick pork bone broth soup, Yawatahama champon has light golden soup made from chicken, bonito, and kelp.
