Dago Dumpling Soup
Dumplings made of flour and stretched out to resemble a noodle (‘Dago’) are placed in a miso or soy flavored broth. A simple and rustic dish. The soup can contain burdock, carrots, shimeji mushrooms and pork etc… It is similar to the ‘Tonjiru’ pork soup eaten across Japan. It is so easy to make and loved by all that there is a local saying that if a girl can make dago dumpling soup, she’ll have no problem in finding a suitor. This warming dish is of course enjoyed in winter, but it is popular at any kind of large gathering. Make a large pot full, let it rest for a day, and enjoy!
