Niimoji
A vinegar dressed ‘salad’ using a kind of potato known as a water arum. Eaten during the hot summer months, this dish is also known as ‘Zuiki’ in other area. Sometimes the potatoes are dried for preservation. It tastes even better when served cold.

- Water potato200g

- Vinegar1 cup
- Sugar6 tablespoon

- Chili peppersmall amount

- Peel potato and chop into 4 cm pieces. Place in water.
※ When peeling start at root and work toward leaves.
※ Wash thoroughly. - 2.
- Add A together in a pot and bring to a boil. Add potato and boil.
※Boiling too much ruins the texture. - 3.
- Garnish with sliced ginger
