Mozuku Soup

Okinawa Mozuku is thicker and fatter than other Mozuku eaten in different region of Japan. Mozuku Soup is a local dish of Okinawa, simply adding raw Mozuku into bonito broth seasoned with salt and soy sauce. Al dente texture of the Mozuku support the simple soup, making this soup very easy to go down even in the summer hot day. Sometime, other ingredients, which doesn't interfere with the texture of Mozuku such as island tofu or Mitsuba (Japanese homewort), are added to soup.
