A teppanyaki restaurant “Rai” in Ninohe City, Iwate Prefecture, offers a unique menu using Iwate’s specialty Nanbu Senbei rice crackers – Teppan Pizza Senbei. Nanbu Senbei crust topped with salami, tomatoes, and cheese is baked crisp, just like pizza. Rai wants to make this as local as possible, so it chooses to use nanbu tekki ironware for the baking, and add local fresh vegetables for the flavour. The crispy texture, appetising aroma of local garlic, and melting cheese make a delicious “pizza”.
