Miura city in Kanagawa has a famous port for tuna fishing, Misaki port. Tuna sauce cutlet don is a menu that like-minded restaurant owners got together to “revitalize Misaki city”. This was a new and tasty menu with locally fished tuna's tail meat for reasonable price after the owners beat their brains to think of something people want to eat again and again. Tail meat has lot of muscles, which is not good for eating raw, but becomes tender and tasty when heated. This cutlet is as tender as fillet meat and light taste.
