Mild and spicy, and colourful with seasonal vegetables
White Curry is a specialty of Hokkaido, which is the birthplace of the famous dish “soup curry”. As its name speaks for itself, it is a white curry sauce made with cream. In Hokkaido, ready-made sauces and roux are available at stores so that it can easily be served at home. White Curry looks very much like cream-based stew, but with one taste of it, you will feel the spicy kick in it. As the dish is finished with fresh milk, it is spicy yet sweet and mild. The colours of vegetables are beautiful against the white of the soup. The dish becomes even more colourful when served with saffron rice.
