Spear squid and Japanese flying squid are the two most common kinds of squid served in Hokkaido. Spear squid is highly-prized for being more tender and tasty than other species, and goes great with a dash of soy sauce, while Japanese flying squid is recommended to cut into thin strips, a sashimi dish known as Ika Somen.
